Recognise good quality beef…….meat should be firm to the touch..
Rsecognise good quality pork….this meat should be firm and smooth to the touch , however the older ones will have more gristle then the younger ones :)

Nooo this info is from my butcher who,s mother works for mssrs Haddaway and shite, and i have full permission to talk about it , as per letter on my wall …………………. :)
