Let`s talk about scones
They are one of the easiest things to make & are extremely versatile. They can be baked, fried, grilled, bbqd over a fire, microwaved, floated on the top of soups & stews, used as topping for shepherds pie etc. You could even eat them raw, if desperate, none of the ingredients has to be cooked – but tastes better that way.
A basic scone mix uses 4 times as much flour as fat, then add milk to form a dough. A pinch of salt helps the flavour.
So 500gms flour to 125gms of butter, marge or cooking fat.
If you use plain flour then add baking powder – instructions on packet. If you use self-raising powder you can add a little baking powder as well to give a higher rise.(or a beaten egg is nice)
Put the flour, baking powder & salt into a bowl. Cut the fat into little pieces & rub them into the flour until the mix looks like fine breadcrumbs. Now , very gradually, add milk to the mix until it binds together to make dough. Shape into balls & flatten them for cooking in your chosen fashion.
You can add almost anything you like to the basic mix – tomato puree, herbs, paprika, any kind of chopped or dried fruit in small pieces (but roll them in a little flour), grated cheese, marmite, let your imagination run free 😊
You can make potato scones by using half mashed potato & half flour – add 2 teaspoons baking powder.
You can make oaty scones by using half oats & half flour – add 2 teaspoons baking powder.
