When I were a lad growing up, I had 3 older sisters, the eldest being a good few years older than me. I was the baby and only boy. So, growing up during the 70’s these girls were Dancing Queens. We grew up on a large, tough and deprived tenement housing estate. So we weren’t allowed to be playing out all night. On a Friday, and sometimes Saturday night, my sisters would organise a bedroom disco. Between them they had a very good collection of vinyl records, mainly disco soul and funky stuff, and a decent ish JVC music center. Basic light changes with coloured bulbs, Xmas lights flashing, a bottle of coca cola and chocolates, the 3 girls tightly orchestrated by the eldest, drilled and slick, very seriously would then get down to some serious business, they would dress up, choreograph dance moves to all the latest disco records, and dance their socks off for an hour or two. This was better than Top of the Pops. To draw comparisons with Pans People, Legs & Co, Hot Gossip would be all too obvious. Occasionally mum and I would come and watch and have a boogie, rarely dad got involved other than ending it when it had gone on for too long. Over the months and years of these bedroom discos select best friends and boyfriends we permitted. I used to reluctantly get dragged in, seriously protesting, and forced to sit, watch, and judge them, and give out points, mock prizes and awards, I was like Simon Cowell, these poor girls, but they did ask for it. So I then was coerced into doing the job of DJ, and I was allowed to operate the Stereo, and after strict training, I was taught what tunes and what order to play them. It grew on me and has stuck. So I can line up dance music all night long :) Yes Sir,. I Can Boogie. I’m guessing some of you readers might have had similar experiences and could identify with.
my daughter and 7 of her friends often had disco partys in her bedroom
but i can also vividly remeber her and 4 of her friends one mothers day were out roller blading and came in begging me to let them make 4 cakes for there mums one was form me so how could i say no right

250gr potatoes, cut into chunks
60gr leek, sliced
60gr carrot, sliced
1 stock cube (I used chicken but veg is fine)
400ml water.
Put everything in a pan and simmer/boil for 20-25mins until potatoes and carrots are soft.
Take off the heat and blend.
That’s it!
Tasty, easy and nutritious. You can add spices if you like but it’s not needed.
Muffins:- Melt 80g butter ( or buttery margarine) and beat 150g vanilla yoghurt and 1 egg into it, then stir in the blueberries ( I normally use 100g defrosted from frozen berries, but the fresh blueberries were free) Stir in 80g sugar. Sift 200g of plain flour with 4tsp of baking powder, then gently stir through into the wet mix ( only just mix, you should have lumps – do not over stir). Spoon mix into 9 giant muffin cases to fill completely and bake at 190C for about 15 minutes.
Total cost ( I am adding in the cost of 100g frozen berries even though my blueberries were free) 99p, so each muffin is 11p.
Cheese scone ring:- rub together 160g self raising flour and 40g butter/margarine. Beat 1 egg, 100g cottage cheese with chives and 1tsp strong made english mustard together. Tip into the flour and mix to a soft dough. Shape into a round and cut down into 6 wedges, then cut 20g strong cheddar into 6 strips and put on each of the segments. Bake 15 minutes at 190C. Total cost 42p, 7p each wedge.
Cherry scone ring:- Rub 160g self raising flour and 40g butter/margarine together, add 30g sugar and stir. Stir in some chopped glace cherries. Beat 1 egg with 3 tbsp vanilla yoghurt and a little vanilla extract. Mix all together to form a soft dough, form into a round and cut down into 6 wedges. Bake 190C appx 15 minutes. Total cost 54p, 9p a wedge.
Quiche. Mix 8oz leftover creamed potato with 8oz plain flour, 2tbsp oil and 1tsp dried sage, make into a soft dough. Use 2/3 to press into a quiche dish ( don’t roll, just use the heel of your hand to push and flatten). Chop 1/4 pack cooking bacon into bits and scatter over the pastry. Blitz 100g cottage cheese with chives and 4 eggs together, then pour into the dish. Bake 20 minutes at 190C, until golden. Total cost appx 80p
Flatbread:- flatten the rest of the potato dough out and push your fingers into it. Melt a small knob of butter and mix a little dried chilli and 1/2tsp smoked paprika into it, then spread over the dough. Chop up a couple of sweet chillies/ a bit of capsicum/ etc.. and sprinkle on the flatbread with a bit of seasalt. Bake 20 minutes. Total cost appx 20p.
I cooked everything in the oven in one go, to save on fuel.
